The History of Soup:The word soup originates from "sop", a dish originally consisting of a soup or thick stew which was soaked up with pieces of bread. The modern meaning of sop has been limited to just the bread intended to be dipped.

The word restaurant was first used in France in the 16th century, to describe a highly concentrated, inexpensive soup, sold by street vendors called restaurer, that was advertised as an antidote to physical exhaustion. In 1765, a Parisian entrepreneur opened a shop specializing in restaurers. This prompted the use f the modern word restaurant to describe the shops.In America, the first colonial cookbook was published by William Parks in Williamsburg, Virginia, in 1742, based on Eliza Smith's The Compleat Housewife; or Accomplished Gentlewoman's Companion and it included several recipes for soups and bisques. A 1772 cookbook, The Frugal Housewife, contained an entire chapter on the topic. English cooking dominated early colonial cooking; but as new immigrants arrived from other countries, other national soups gained popularity. In particular, German immigrants living in Pennsylvania were famous for their potato soups. In 1794, Jean Baptiste Gilbert Payplat dis Julien, a refugee from the French Revolution, opened an eating establishment in Boston called Restorator, and became known as "The Prince of Soups." The first American cooking pamphlet dedicated to soup recipes was written in 1882 by Emma Ewing: Soups and Soup Making.

Cooking Time: 25 minutes

Per Serving: (Serves 4) Calories 165.6, Proteins 9.4 g, Fat 6.5 g, Carbohydrates: 17.3 g

Ingredients

300 gm green cabbage

30 gm onion, finely chopped

150 gm potatoes

15 gm coriander stems, finely chopped

30 gm unsalted white butter

1/2 tsp cumin

1/2 tbs yeast

2 bay leaves

900 ml chicken stock

100 gm boneless chicken

1/2 tsp black pepper

1 wholewheat roti

10 gm coriander leaves

Sea salt

Method:

Take the onion and coriander stems and chop them.

The next step consists of dicing the chicken.

Take the roti and cut it into small pieces. Now toast the roti.

Take the cabbage and remove its outer leaves and dice. Also scrape and dice the potatoes.

Take a pan and put butter in it for heating. Saute the cumin and bay leaves, until they start to crackle.

Add the veggies and chicken and sauté for 6-8 minutes.

Add yeast to the mixture and stir properly.

Pour chicken stock into the pan and bring the mixture to a boil. Simmer for about 10 minutes.

Add salt and black pepper and mix well.

Garnish the mixture with the toasted roti and coriander leaves and your delicious soup is ready to be served hot.

How long do you cook soup bones for?

I'm cooking soup tonight and i can't find how long to cook them for.

Well, there is different kinds of soup bones. If you have neck bones with meat on them, boil, & cook covered in water, with an onion, carrots, and celery and salt and pepper for the best stock flavor, for at least 1hour and longer if possible.. Chop the veggies in large chunks, as by the time you add the rest of the soup ingredients and continue to cook the soup most of the veggies will break down. You can discard the veggies before adding the soup ingredients or leave them in for the additional flavor and nutrition. For Knuckle bones, I'd cook them longer as they ae much more dense, also, you will have more of a gelatin type of soup stock with knuckle bones. Generally, a richer broth. Same method just longer to cook, add 30 min to an hour more. If this is your first time cooking with beef bones, there will be a creamy colored bubbly stuff on the top of the water. You can skim this off or stir it in. It is actually beef protein, but looks nasty, it is up to you. Won't hurt the soup broth, but will keep it from being clear. Hope this helps.....
